In Spain you get deeply ordinary paella in loads of places, with frozen shellfish, workaday rice, stock cubes, and those skinflint lookalikes for saffron.

Sunday at Cadiz in Edinburgh is paella day.

"Our paellas take 30-40 minutes to prepare, [so] why not order some of our Platos Pequenos (small plates) with a chilled bottle of wine and enjoy a lazy Sunday."

A steaming pan of shell-on Venus clams "sautéed in white wine and garlic, finished with coriander" is the first dish that stalls my overall appreciative assessment.

While the grains of rice are judiciously firm, and the saffron aroma is present, the rice element is almost dry, as if it might have been reasonable paella 15 minutes earlier.

We recently got a new Head Chef at the restaurant, who has Michelin star experience, so he really knows what he is doing.

Just now there is some homemade humous but not a lot else because I spend so much time here cooking for other people!

Not really, but I get a lot of inspiration from chefs who have more experience than me.

A very simple dish, although it’s really hard to get it spot on, but when you do, it’s heaven!

Opened in the summer of 2016, Cadiz is a cosmopolitan seafood restaurant on George Street in Edinburgh city centre.

The menu takes much inspiration from the Mediterranean and the decor wouldn’t look out of place in a smart harbour restaurant in the South of France.

With menus which feature Shetland mussels, West Coast langoustines, Mull scallops and prime Scottish beef steaks, Scotland’s natural larder is well represented at Cadiz.

Cadiz is a first floor restaurant above Cafe Andaluz on George Street.
