The Speratus Group has unveiled restaurant and bar Copper Blossom in Edinburgh Classic and cutting edge come together at a new restaurant and cocktail bar that has been created by The Speratus Group in Edinburgh.

“Featuring beautifully floral and whimsical botanical elements, with an airy yet welcoming feel, this new bar will bring back nostalgic memories and create the perfect setting for a show-stopping cocktail,” says designer Adam Tibbatts.

Twisted classics include a Bloody Mary made with spiced Ketel One vodka, clarified tomato juice, house-made hot sauce and Bloody Mary concentrates (pictured), while the simply named Calvados Cocktail combines calvados with bitters and clarified apple juice.

Other drinks, created under bar manager Jide Sosimi, include the Crystal Peach, made with Crystal Head Vodka, peach liqueur, homemade peach juice and lactic acid, which is part of the “Dance Floor Drinks” list.

After opening in September, Copper Blossom has become the flagship for The Speratus Group whose other venues include Edinburgh cocktail bar 99 Hanover Street, Amicus Apple in Aberdeen and The Boozy Cow in Edinburgh and Aberdeen.

I've spoken before about the difficulties in getting lunch in the capital so when Copper Blossom invited us to try out their recently launched lunch menu, we were quick to accept their kind offer.

Copper Blossom's address is George Street although you could easily miss them as the entrance is actually round the corner on North Castle Street.

Cocktails seemed to be the order of the day at Copper Blossom with the noise of bartenders shaking their intoxicating potions but as we were were planning on drinking well into the day, Nicola settled on an ice cold white wine whilst I was drawn to the latest offering from Italian brewers, Peroni.

Peroni Ambra is a limited edition beer flavoured with chinotto, a citrus fruit grown and harvested in North West Italy.

Peroni see this as the perfect summer drink to be served over ice with a twist of orange although I'm not sure that the beer was working in the drizzly backdrop of Edinburgh in August.

On weekends DJs play chilled out beats and evenings are fueled by some of the best cocktails in town as well as a great wine list!

There is a dining menu with the focus on classics (burgers, fish and chips, ham, eggs and chips) and if you are looking for a nibble with your drinks there is a comprehensive ‘bites’ list to tuck into.

The 2017/18 edition of The List's Eating & Drinking Guide is out now – only £5.95 (+ ).

Of a weekend DJs play Motown, house or R&B and the fun is fuelled by an elegant cocktail menu, which features the classics and pays attention to the details – try a Mai Tai with Plantation rum, Pierre Ferrand orange curacao and orgeat.

The food menu plays it safe but fish and chips and cheeseburger do not disappoint and a lengthy ‘bites’ list makes for appealing sharing options.

The Sky Bar, Le Monde’s party piece, is an elegant homage to the New York skyline, with silhouetted versions of the city that never sleeps adorning the walls and a fine range of cocktails expertly crafted by well-trained mixologists behind the bar.

It’s at the pricier end of the George Street scale, but with an excellent range of malt and world whiskies as well as a range of unique cocktail concoctions with a literary theme.

A favourite with the boisterous after-work crowd, All Bar One benefits from competitive prices and a good selection of cocktails and wines.

The cocktail menu could easily compete with some of the more established cocktail bars in the city, but where All Bar One really shines is with its wine offering.

Behind the bar, cocktails are created from century old recipes, somewhat pleasingly using original instruments, but there’s plenty of modern innovation going into every drink.
