The Brasserie’s name makes reference to the moment in Scottish history when Sir Walter Scott uncovered the Scottish Crown Jewels, or The Honours of Scotland.

It also owes a debt to an 18th century book on etiquette, “the Honours of the Table” by Rev. Dr. John Trusler, who exclaimed “To do the honours of a table gracefully, is one of the outlines of a well-bred man…”.

Two-drawer Adande units feature at Restaurant Martin Wishart and at The Honours.

More upper drawer is set at -14°C, the lower at -20°C. "It holds the temperature and that is the important thing, even more especially as the drawer can be opened up to 50 times during service (double that at the brasserie) - conventional freezers drop temperature so quickly!

"The Adande drawers keep our ice cream service consistent.

Head Chef Paul Tamburrini was equally happy with his Adande two-drawer unit, again applauding the temperature consistency during busy periods of service.

"The Adande is like an Ikea unit," said Pat, "it looks small but you open up the drawer and there is all this space!"

The native Glaswegian has left his role as chef director at Martin Wishart’s The Honours Brasserie in Edinburgh and signed a deal with Macdonald Hotels & Resorts to launch the 80-cover site.

Bistro Deluxe by Paul Tamburrini will offer French cuisine cooked with local Scottish ingredients, and could potentially open across Macdonald Hotels’ 45-strong UK portfolio if successful.

“It will be a superb dining experience and once established, we have ambitions to build on what will undoubtedly be a successful venture by rolling it out in some of our other hotels across the UK,” says Ruaridh Macdonald, deputy chief executive of Macdonald Hotels.

Tamburrini trained with Marco Pierre White at L’Escargot in London before cooking at Michelin-starred Restaurant Martin Wishart in Leith and Glasgow’s Hotel du Vin at One Devonshire Gardens.

Tamburrini is the latest big-name chef signing for Macdonald Hotels, which hired former Scottish Chef of the Year Tony Borthwick to head up the kitchen at the Macdonald Rusacks Hotel in St Andrews last year.

Paul Tamburrini has left his role as chef director at Martin Wishart's The Honours Brasserie to launch his first restaurant at the Macdonald Holyrood Hotel .

The move marks a further advance in Macdonald Hotels & Resorts' push to upgrade the food and beverage offering across 45-strong UK hotel portfolio.

“This is a once in a lifetime opportunity,” Tamburrini said of the deal with Macdonald Hotels.

“The management at Macdonald Hotels & Resorts approached me with a really exciting proposal to combine their position as the UK's largest independent hotel group with my ambition to open a restaurant in my name.

As part of the deal with Tamburrini, the restaurant will be re-designed and a new state-of-the-art kitchen installed.
