The Dome is a building on George Street in the New Town of Edinburgh, Scotland.

"The physicians appeared never to have been completely happy with it and sold the site to the Commercial Bank, which ripped down Craig's building to erect a superb banking hall".

[2] Owned by Scotland's Commercial Bank, a new project by architect David Rhind was on the horizon for the now empty lot.

Banks and insurance companies built ever more grandiose headquarters and branches in the cities, along with offices for lawyers, shipping firms and land agents; the construction of bank chambers from the 1840s (as with David Rhind's work for the Commercial Bank) constituted one of the biggest ever building campaigns in Scottish cities".

"From the mid- 1830s and early 1840s, while Thomas Hamilton and Playfair had continued to exploit the potential of explicitly Grecian architecture, William Burn, David Bryce (Burn's partner 1841-50) and David Rhind had begun to move towards an astylar, Italian palazzo-like classicism for some commercial buildings and club-houses, and a Graeco-Baroque grandeur for others -- in both cases, combined with a somewhat Greek sharpness of detail".

The 2017/18 edition of The List's Eating & Drinking Guide is out now – only £5.95 (+ ).

Resplendent seems a fitting description for The Dome on George Street.

Despite the high-vaulted ceilings, the use of rich décor and soft furnishings create a cosy dining experience which cleverly avoids the dreaded echo one might expect from a such a cavernous space.

A grass-fed Buccleuch fillet is gamey and rich.

With a nod to the old-school grandeur of times past, this impressive venue provides a special and reliable dining experience.

The Sky Bar, Le Monde’s party piece, is an elegant homage to the New York skyline, with silhouetted versions of the city that never sleeps adorning the walls and a fine range of cocktails expertly crafted by well-trained mixologists behind the bar.

It’s at the pricier end of the George Street scale, but with an excellent range of malt and world whiskies as well as a range of unique cocktail concoctions with a literary theme.

A favourite with the boisterous after-work crowd, All Bar One benefits from competitive prices and a good selection of cocktails and wines.

The cocktail menu could easily compete with some of the more established cocktail bars in the city, but where All Bar One really shines is with its wine offering.

Behind the bar, cocktails are created from century old recipes, somewhat pleasingly using original instruments, but there’s plenty of modern innovation going into every drink.

Grant, who knows a thing or two about the trade, reckoned The Printing Press, part of the George Hotel, is following favourably in the footsteps of the London trend that sees top restaurants attached to hotels such as The Berkeley, Claridges and 47 Park Street.

The Printing Press is spacious, with luxuriant booths and lots of tables capable of being re-arranged into twos to help boost multiple covers, another London necessity.

The Printing Press does not so much offer a menu as deliver a take-it-or-leave-it ultimatum Nine starters?

Big isn’t always beautiful and there’s a streak of integrity running through the menu, which prides itself on offering seasonal dishes and delivers on its promise to offer Scottish produce bursting with flavour.

A decent selection of Scottish cheeses rounded off the meal for Grant, while I went for a marmalade steamed pudding that was as fluffy and delicate as the kick from the Drambuie custard was strong.

The Dome incorporates The Grill Room  and The Club Room (Bar/ Restaurants), 4 Conference Rooms, 2 Private Dining Suites and The Garden Café.

The Dome is a cocktail haven.

I often like to measure an establishment on its ability to shake up the classics so I opted for a French Martini (when it comes to this drink, I like to think of myself as a bit of a connoisseur).

This experience has cemented The Dome as one of Edinburgh’s great bars in my mind – I’m already planning my next trip back.

This is a formal afternoon tea with a sense of occasion, including impeccable silver service under a Venetian crystal chandelier, palm trees and a harp playing gently in the background.
