Electric Owl Review: Ernesto Uchimura of Umami Burger Fame ...

There was a time, a few years back, when cleverness seemed to dominate the New American food dialogue, and one of the voices at the forefront of that dialogue in L.A. was Ernesto Uchimura.

At his new restaurant, Electric Owl in West Hollywood, you'll hear servers refer reverentially to Uchimura's days at Plan Check, telling customers, "He's the chef who invented ketchup leather."

But at Electric Owl, Uchimura takes a couple of baby steps away from that type of cleverness — dare I call it gimmickry?

The vegetable section of the menu is perhaps where Uchimura shows the most prowess, using that culinary cleverness to great advantage.

Smoked potato gnocchi with Dungeness crab, corn, brown butter and pink peppercorn reads like one of the menu's most reliable crowd pleasers but it falls flat in the bowl, the flavors and textures oddly unharmonious.

A Little Love and a Big Pork Chop - The New York Times

The star of the menu, a dish that seemingly every third diner orders, is the grilled pork chop, which is no more — or less — than a glorious hunk of flesh.

Forget the overcute overuse of the term sliders in New York restaurants these days and just concentrate on the pleasure of these miniature sandwiches, arrayed in a row of four that officially constitutes an appetizer but also works as a side.

At Pace the menu reached in so many trendy directions that the kitchen couldn’t do justice to everything and the ratio of hits to misses wasn’t impressive.

Mr. Campanaro has pared down his menu to what he obviously feels complete confidence in preparing: about nine appetizers, including that cavatelli and a wedge of seared hamachi with an uncommonly nuanced coleslaw; seven entrees, including the steak and a “crispy chicken” that lived up to its billing; and a handful of sides.

Because of its size, the restaurant has little wiggle room if diners linger.

Besha Rodell was quick on the draw for her Electric Owl review, a new West Hollywood restaurant from Ernesto Uchimura that opened on April 20.

B-Rod frames her review as a kind of new chapter for Uchimura, who’s mostly been known for making burgers: But at Electric Owl, Uchimura takes a couple of baby steps away from that type of cleverness — dare I call it gimmickry?

In other words, there are no truffle oil burgers on the menu.

Not all of Uchimura’s more innovative approach works, however: Smoked potato gnocchi with Dungeness crab, corn, brown butter and pink peppercorn reads like one of the menu's most reliable crowd pleasers but it falls flat in the bowl, the flavors and textures oddly unharmonious.

Still, it’s nice that Rodell put Uchimura’s intentions and accomplishments in perspective (he did, in fact, invent ketchup leather), and that sometimes a bit of culinary adventure results in mixed results.
