Edinburgh is packed with Whisky Bars, but we’ve tirelessly worked our way through them (someone had to) and picked just four luxury Edinburgh whisky bars with something special.

Edinburgh’s ‘Grand Dame’ The Balmoral recently added a dedicated whisky bar, ‘Scotch’ to its stable of facilities.

Scotch tops the whisky selection ‘league table’ of Edinburgh Whisky Bars to our knowledge, with over 500 whiskies on offer.

Amber Restaurant and Whisky Bar is situated on the lower-ground floor of Edinburgh’s 5-star attraction ‘The Scotch Whisky Experience’, so it’s not surprising the selection is amazing (a wall of 400+ Scotch whiskies), or that you learn something from the excellent team when you imbibe here.

A welcome newcomer to Edinburgh’s West End, Usquabae Whisky Bar & Larder occupies the cellar of ‘Ryan’s Bar’ – but once you’ve entered the cosy and luxurious space, the outside world becomes a memory.

Not just for whisky lovers, this relaxed spot serves classic Scottish dishes with occasional contemporary twists.

If there is a whisky aficionado in your life, you may already be aware of Amber’s charms.

Situated beneath the Scotch Whisky Experience with one of the largest choices of whisky in town, the cosy dining room is much more than an add-on for the hugely popular tourist attraction upstairs.

Local produce sourcing is high on their priority list, a great example being the pretty starter of diced Scottish salmon, cured in East Lothian cider, piled into towers and surrounded by little dabs of tart apple jelly and mustard cream.

The drinks list is, understandably, heavily biased towards whisky (pairings with food are encouraged) but there’s still a reasonable, modestly priced selection of wine too.

With a menu centred around locally sourced meat, fish and game, you might find spicy apple, fennel and sweet potato soup with cheddar shortbread; juniper berry and Edinburgh Gin gravadlax; lamb rump with rosemary sautéed potatoes; haggis filo parcels with plum sauce; pheasant breast stuffed with rhubarb and apple; scallops topped with smoked salmon and, of course, cranachan.

Serving breakfast, lunch and dinner, as well as a children’s menu, choices include black pudding and brie parcels; haggis, neeps and tatties with a whisky cream sauce; cullen skink; heather honey and Arran mustard chicken skewers; poached Scottish salmon with lemon and dill cream, and whisky-glazed chicken wings.

On the menu are leek and potato soup with a poached hen’s egg; smoked salmon with wasabi, pickled onion rings and caviar; scallops with apple, black pudding and pickled walnuts; venison with red cabbage and chocolate; rabbit loin with black pudding, pancetta and pearl barley and ginger, honey and pear cheesecake, plus a six-course tasting menu – book ahead if you fancy dining à deux in the private room overlooking the close.

Sitting in the shadow of Edinburgh Castle, the Amber restaurant at the Scotch Whisky Experience has a Taste of Scotland set menu and a Scottish tapas selection in addition to its seasonal à la carte menu, all with a focus on fresh Scottish produce.

The Taste of Scotland option comprises a trio of starters, followed by another of mains, and a dessert matched with a whisky chosen from their selection of more than 400 – think Isle of Bute smoked salmon and lobster roulade, wood pigeon breast with bacon and figs; rump of Border lamb with stovies and Scottish sea trout with a Mull cheddar glaze.
