SPATCH, the best thing to happen to chickens since feathers, is now open on Edinburgh’s Royal Mile.

Barn reared Scottish chickens are SPATCHed and then Charcoal Fired on our custom-made rotisserie in the centre of the restaurant – adding the perfect natural hint of smoke to our self-basting birds.

Homemade sauces and innovative side dishes are the perfect accompaniment to either chicken or slow cooked Baby Back Ribs, Award Winning Steaks, and an extensive range of Scottish craft beers and spirits.

You’ll find us on Hunter Square next to the Tron Kirk, the epicentre of Edinburgh’s Fringe Festival activities; with street shows, walking tours, ghost tours, bars, pubs and clubs aplenty.

While my coronation endeavours will undoubtedly deliver the step change we’ve all been waiting for in our relationship with chicken, more conventional routes still exist.

On my recent travels around England and Wales the appearance of what you might call posh chicken shops was conspicuous.

In the premises that were fleetingly a branch of Harry Ramsden’s, the interior of the narrow space features an open kitchen with the expected spit-roaster for their signature spatchcocked chickens.

The menu is packed with puns with one of their chicken burgers called the Cluck Norris.

It was a dull and flavour-light chicken breast allegedly topped with two types of barbecued chicken meat and bacon.

We had been recommended Taxidi from a colleague whose husband is Greek, so we took this as a serious endorsement.

We also ordered some tzatziki on the side to help it all slide down.

The chicken, in particular, was very moist.

Whilst we were happily munching away, a couple of women on a table by the window had managed to set their menu on fire (how on earth they managed this I will never know) and seemed to be fanning the flames rather than actually putting it out.

We decided to split what we ordered between us, so we chose the all you can eat wings with the sweet and spicy sauce (other options include sauces such as BBQ and nuclear hot), then we tactically chose the BBQ pork ribs as it came with a couple of sides which we wanted anyway (chips and a tequila and lime slaw).

We got an extra side of hot BBQ beans.

The sauce was smothering the wings but fear not, kitchen towel and hand wipes are on standby.

The chips were chunky and good for dipping in the sauces, although we did have a little bit of envy when we saw sweet potato fries being delivered to another table.

As their namesake and, thus, their thing, we were reasonably happy with the spatchcock chicken (£15.95 for whole bird, which we had, £8.95 for half), which was chopped into six hunks and featured a lemon and herb baste (or you could have smoky bbq).

Chicken is, after all, the most popular meat on the planet (apart from when it’s unevolved and wants to bite your head off).

Spatch is a grilled chicken restaurant on Hunter Square, just off Edinburgh’s Royal Mile.

As the name implies, spatchcocked (split and opened) chicken is the main attraction here and it is cooked over charcoal in the open kitchen.

Available whole or by the half, it can be accompanied by a range of sauces such as house BBQ, piri piri or the more exotic Caribbean jerk peach.

Alternatives to spatchcocked chicken include a fillet steak, veggie burger, BBQ pork ribs and The Cluck Norris – a chunky burger made with chicken cooked three ways.

Desserts such as banoffee pot and Key Lime pie will fill any remaining spaces.
