Just over two years ago we launched the Whistle Stop Barber Shop with one objective, to be known as a home for great food, strong drinks & top notch banter.

We’ve delivered on the first two, and are working hard every day to achieve that last one.

Whistle Stop Barber Shop has taken over what used to be Rascals and I’d previously been in with friends before heading to Festival Theatre Edinburgh for a show and knew the food was good.

Having recently launched a new menu they’ve kept the favourite bits regulars would be in uproar if they removed and have added to the menu their take on hotdogs, new burgers and also for the healthier amongst us house salads.

Mr E had the Trident burger – a double patty of meat, lettuce, pepper cheese, salsa, triple chilis and house hot sauce, I couldn’t resist the Grilled Hawaiian – buffalo mozzarella, charred pineapple and honey roast ham.

The burger was spicy enough for someone who likes a good bit of spice but not so spicy it overpowered all the other flavours of the burger.

The fries loaded with beer cheese and bacon were very cheesy and a good match for the spice of the burger.

The Whistle Stop Barber Shop is confused.

Inspired loosely by American culture, Whistle Stop features elements of a baseball themed Harlem store, the metallic design of a Brooklyn loft and – imitating Panda & Sons – an old-fashioned barber shop filled with leather upholstered barber chairs, straight razors and oversized scissors.

Since the new menu launch on Monday 29 February, Whistle Stop have been serving up juicy, homemade Scottish beef burgers with a 20 per cent student discount.

Talk about Whistle Stop by name, whistle stop by nature.

Enjoyable central hangout, whose diner-style range of burgers, hot dogs, pizzas and chargrill steaks set it apart.

This part of South Bridge has traditionally been something of a dead zone for bars, but the Whistle Stop Barber Shop has confidently challenged that perception since its opening in 2015.

More compact than it looks from the outside, the bar has a modest amount of booth and table seating for eating, decent standing space near the bar and a mock barber’s shop in the basement.

The food is equally in hock to the US of A, with the flagship burgers including a hot chilli cheese ‘Triple Threat’ and a mac n cheese-topped version.

With hot dogs, nachos, wings, pizzas and inventive sharers including a Philly egg roll, this is a recommended burger joint in a city awash with them.

Don’t look for a haircut at the Whistle Stop Barber Shop on South Bridge, but kick-ass cocktails, classic American cuisine and playful banter are all on offer at this inviting bar and diner.

Cinematic American touches distinguish the playful décor, with its scissor motifs, barber’s chairs and comfortable retro-style booths and banquettes.

Chicken wings, nachos and sides such as Cajun corn and buffalo chicken tenders will plug any remaining gaps in the appetite.

Naturally, you can order your fries straight up or load them with toppings such as poutine or a beer, cheese and bacon combo.

The Whistle Stop Barber Shop is located on South Bridge in central Edinburgh, a five minute stroll from Waverley Station.

Also the chicken burger was lukewarm and delivered without the sweet potato chips as they were delayed.

We asked for a new chicken burger to be served much hotter.

When all three burgers were re-cooked, the chicken burger was still lukewarm but due to the time we had for lunch, we had to eat it.

The sweet potato chips had still not arrived with the chicken burger and again were delivered at least ten minutes after the new burger.

The two new beef burgers were served and they were much better cooked second time around but still not as hot as we would have liked them.
