Cate Devine, as is her usual way, wrote a pretty interesting piece the other day about the hotel restaurant.

It had some quotes from hotel operators about milennials’ attitudes to hotel restaurants and how soon-to-launch Baba is a restaurant in a hotel not a hotel restaurant and how this concept will blow the fucking doors of the whole dining scene in the way that their cited success with the extremely mediocre Refuge by Volta at the Principal in Manchester completely hasn’t.

Anyhoo, it also had much more considered stuff directly from Cate’s pen about big-name chefs opening hotel restaurants with their name above the door, mentioning Bistro Deluxe by Paul Tamburrini as a good recent example of this.

And who knows, maybe if Baba blows the mind of milennials whose parents fucked up their hotel restaurant appreciating minds, they could be on to a runaway success.

You might not know his name but you’ll certainly recognise the restaurants where Paul Tamburrini has spent honing his Chef Skills; from Head Chef at Cameron House, Loch Lomond, to Executive Chef at Glasgow One Devonshire Gardens; to most recently Chef Director at Martin Wishart’s Honours Brasserie and now as Chef Patron in a partnership with Macdonald Hotels.

Macdonald Hotels, in a move to make hotel dining more exciting and modern have and will continue to team up with some of the UK’s greatest chefs such as Atul Kochhar who owns Sindhu at Macdonald Compleat Angler in Marlow; and Tony Borthwick (ex Plumed Horse restaurant in Leith) who is the new Executive Chef of Rocca Restaurant, St Andrews.

Bistro Deluxe has over 40 varietals of wine making up an extensive wine library.

This wine picked up the apple and the strong bold flavours of the duck liver.

The only dish served with a red wine, a Pinot Noir, Bodega Garzon from Uruguay.

Bistro Deluxe at Macdonald Holyrood Hotel restaurants can sometimes be a bit of a missed opportunity, offering little in the way of personality or inspired menu choices.

Duck, lentil and foie gras terrine, carrot crumble and apple Main Course For the main course, I went with restaurant manager Peter’s recommendation of the Presa Iberico (£24) cooked on the Josper grill and served with triple cooked chips and vine-roasted tomatoes.

Presa Iberico Triple cooked chips Donnie’s main was a tower of poached and roasted chicken in a morel broth topped with wilting baby leeks and slivers of the intense nutty mushroom (£22).

Tonka bean ice-cream, hazelnut chocolate cookies, brittle Donnie’s dessert was a nice blast of tropical sunshine on a cold and damp January evening.

The food is dreamy at Bistro Deluxe by Paul Tamburrini, says Gaby Soutar A few years ago, our office was taken over by The Youth.

So, even though the newest incarnation has Paul Tamburrini, former chef director of Martin Wishart’s The Honours at the helm, I was still wary about dinner, especially as the hard-to-navigate Macdonald Hotel website describes the place as a “slightly decadent version of what a bistro should be”.

I continued the fresh theme with the organic beetroot, apple, yogurt and gazpacho (£8) option – simple and lovely, tangy, crunchy and sweet in all the right places.

I received a relatively burly leg, but with a neatly turned ankle, glossy with jus, and served with a jug of creamy mustard sauce and the best crispy-edged caramelised and buttery fondant potatoes EVER.

Since Rockstar North won’t let me in, I’m glad there’s now a decadent eating out option at the end of Holyrood Road.

Opened in the summer of 2017, Bistro Deluxe by Paul Tamburrini at Macdonald Holyrood Hotel is a smart, contemporary restaurant which sits in the lee of Arthur’s Seat.

The menus at Bistro Deluxe by Paul Tamburrini demonstrate the chef’s signature blend of French cuisine and the finest Scottish ingredients.

Main courses include fish choices like the Gigha halibut with shaved fennel, black olive and peppers as well as meat options like the slow-cooked, French, farmed rabbit leg with butter sautéed potatoes and mustard.

A vegetarian option might be the black truffle crémeux risotto topped with a slow-cooked egg.

Bistro Deluxe by Paul Tamburrini is in the Macdonald Holyrood Hotel on Holyrood Road by the Scottish Parliament and five minute walk from the Palace of Holyrood.
