Our signature dish, the 'Burn Soyu Ramen' was a result of a collaboration with Japan's Ramen Master Chef; Miss Misae Ueda, and continues to be a firm favourite in our small establishment.

Have a giggle while scanning the walls – they’re covered in colourful post-it notes sharing previous diners’ secrets, hopes and dreams – then start the food off with maki, a green dragon roll filled with prawn tempura and avocado, which is beautifully presented and delightfully fresh.

The chicken yakatori is warming with a good punch of chilli and pairs nicely with sticky rice and crunchy broccoli on the side.

If it’s a bit nippy, cool down with aloe vera water or green tea by your side.

Alternatively, give the chef’s ‘burnt soyu’ a whirl: a deeply savoury, generous bowl of ramen with all sorts of accompaniments crammed into the bowl.

Service is equally generous in this understated wee joint.

Sushi and sashimi made fresh to order?

The old Japanese favourites are all there and as popular as ever but Maki Maki has a unique selling point.

Sea bream sashimi is light and fresh, lent a fiery punch by the addition of grated raw wasabi.

Squid nigiri is amped up with the unusual addition of fresh basil, while white tuna is served from under a smoking glass cloche for added dramatic flair.

Barbecued eel is a revelation while raw scallop served with lime zest and blowtorched Japanese mayo is a stunning combination.

This sushi bar, crammed into a minuscule location in Newington, would be better focusing on one thing and doing it well, finds Gaby Soutar Some people have great ideas, but only a tiny budget.

Bar-style seating lines the length of the space and there are colourful Post-It notes stuck to the walls, with Biro-scribbled pictures and messages from past diners that include “Hot hot hot hell ramen” and “The maki was magnifico”.

Contrary to my prejudices, it tasted sea clean and good, as did our set of two prawn maki and gunkan versions (£2.40 each), the latter of which featured a sparkling topping of carrot-coloured tobiko.

A set of two skewered takoyaki octopus balls (£2.80) were hot and creamily centered, aubergine (£2.30) was miso sweet, but the strips of fruit had withered to almost nothing, while the sirloin and mushroom (£4.20) and lamb cumin (£2.80) versions were equally negligible in size, though well seasoned and soft.

My miso version (£7.60) had a dense content of 93 per cent noodles in a smooth soya broth, though there was also sweetcorn, milk tooth-sized cubes of silky tofu, daikon, toasted sesame seeds, spring greens and a flag of dried nori, all pushed to the surface like a rowing boat on top of a surfacing whale.

Your sushi cravings will be satisfied at the new branch of Maki & Ramen, says Gaby Soutar My sock collection is a disgrace.

Their other venues are quite casual, so this is their fancier project, with a smart sushi bar, where you can order omakase edomae style(you trust the chef to present what’s the freshest and most delicious that day).

We kicked off with a couple of bowls of the eponymous ramen as, apparently, the chef here trained at the Yamamoto Ramen School.

Th emaster chef ramen won though, as it was the mami of all umami things, with a flurry of crisp garlic flakes and a broth that, should you bathe in it, you’d emerge stronger, burlier and manlier, sort of like a merman.

The menu also features a section of grilled sushi, and we tried the salmon and lime nigiri (£4.20 for two).

Maki and Ramen - West Richmond Street takes warm, comforting bowls of ramen soup into the heart of the Old Town in a modern, cosy wood-furnished space.

You know they don’t cut corners at this Japanese restaurant, as the pork broth is made from scratch and cooked for eight hours before being served with ramen noodles, chashu (marinated braised pork belly), a soft-boiled egg and greens.

A wide assortment of sushi, sashimi and side dishes complete the experience, so get down to this West Richmond Street hotspot for some of the most delicious and authentic dishes you’ll find in Edinburgh.
