And so, thanks to however many inches of snow, we arrived fashionably late at the Kilted Lobster – a venue that promises some of Scotland’s finest seafood, as well as plenty of Scottish flair in the way it’s prepared.

With so much to commend the Kilted Lobster, we were only too happy to make a reservation.

Joining us, our fabulous friends Virginia and Grant, who began pouring our first glass of wine even before we’d hopped out of the taxi.

So with three devotees of lamb at the table, it was now the sole responsibility of our resident pigeon-lover to review the restaurant’s signature dish: the Kilted Lobster.

French Onion and Oxtail Soup with Smokehead Whisky Next up was the main event of the evening – The Rib-Aye with a selection of side dishes and sauces to try.

Scottish Cheese Selection for us all to share Leith is fast becoming Edinburgh’s foodie heart and it’s good to see Rib-Aye joining the growing band of fantastic restaurants there.

Table decorations at the Kilted Lobster We were invited to a tasting dinner that showcased what this restaurant is all about – Scotland’s abundant seasonal larder and traditional produce served up in new and exciting ways by a chef who wears his heart on his sleeve.

The whole thing looked and tasted clearing the plate of every morsel and fretting over how on earth they would get the mirrored dishes washed, we were treated to a starter of woodland pigeon breast, fruit dumpling, Stornoway black pudding, chorizo crumbles and Merlot syrup.

Pigeon Next up on our grand tour of Scotland was a seafood platter including Scottish calamari, West coast langoustine, cod fillet and mussel veloute served with sweet potato gnocchi.

The dish washer did a sterling job on the mirrored plates as they were back for the grand finale starring Jura soaked clootie dumpling, a hand-made petit four, a piece of tablet and toffee apple panna cotta.

He explained that this was his first venture in Scotland after working for over 20 years in various restaurants throughout the world.

At the Kilted Lobster, in a quiet nook of Edinburgh’s trendy Stockbridge neighborhood, Colin Hinds, the owner, is more than happy to tell you what you should be eating.

Mr. Hinds, who was executive chef at various Edinburgh restaurants before opening the Kilted Lobster in October, was right, of course — the sea bream with a briny, rock-salted skin was marvelous, with its juicy flesh bearing a lovely sweetness that married nicely with its tomato salsa pairing.

“I wanted it to be rustic, comfortable and a little bit quirky,” Mr. Hinds said.

Our meal began with an amuse-bouche of little bites served on a mirrored plate — quarter-size crispy haggis balls, a deliciously simple roll of smoked salmon and a perfectly executed fried oyster.

Mr. Hinds has pledged the restaurant’s profits to initiatives such as training and job placement programs as well as to cooking classes for single parents on a budget.

Scotland is known for its quality seafood, and at the Kilted Lobster you can sample some of the best, right in the heart of the capital.

Champions of sustainable Scottish produce, Kilted Lobster serve up seafood with a conscience, taking classic recipes and giving them a creative twist.

Try some alba skink, a traditional Scottish seafood chowder, or some West Coast mussels with white wine and garlic emulsion, before moving on to Kilted Lobster's signature lobster, available half or whole and served with garlic butter, caramelised corn on the cob and confit sweet potato.

If you’re not a fan of seafood, don’t worry, because you’ll find choices like venison and beef shin stovies, and sweet potato and poppy seed gnocchi on the menu too.

Located on St Stephen Street in the Stockbridge market area of the New Town, Kilted Lobster is a favourite among seafood loving locals, as well as being a hotspot for tourists looking to sample some fine Scottish cuisine.
