Modou is Senegalese, but spent many years of his life in Spain.

Modou came over by himself to Glasgow with only £150 in his pocket to look for an opportunity in life at the age of 18.

He then stumbled across my ad when he was applying for jobs online and applied within 3 minutes of the ad being live for a kitchen porter.

Modou was given a unique opportunity and grasped it with both hands, gaining more and more knowledge on a daily basis, absorbing it all like a sponge.

Modou's hard work and dedication has been rewarded - he is now Head Chef of 111 and will be working with Nico to help train other aspiring chefs.

To finish off our stay (more on that to come) at the Macdonald Marine Hotel Spa North Berwick, East Lothian we tried out their newly launched Sunday lunch concept at their Craigleith Restaurant.

With one, two or three courses available, the new Sunday lunch menu uses the finest seasonal ingredients from high quality local suppliers.

If you’ve managed to leave some room for mains, you can choose from a Roast 21 Day Aged Scottish Beef, accompanied by roast potatoes and Yorkshire pudding, Pan Fried Pave of Cod with new potatoes, leeks and parsley veloute, Roast Chicken Breast with braised cabbage and carrots or a Spring Vegetable Risotto with feta and watercress for those wanting a vegetarian option.

If you manage to save a little room for dessert you can choose from a light Vanilla Panna Cotta with strawberry, elderflower and Prosecco soup, a dark chocolate brownie with salted caramel ice cream, Ice Cranachan Parfait with whisky flapjack and raspberry sorbet and a selection of Scottish cheeses, oatcakes, celery, grapes and chutney.

Diners can expect nothing but the best from the new Sunday lunch menu and we are looking forward to welcoming foodies from East Lothian and further afield to enjoy this new dining experience.”

Given my chicken is taking a while I drift along the stalls trying to work out from which of these rough and ready and, frankly, slightly unappetising-looking plywood booths will emerge the best bang for my £5 fixed-price food voucher buck.

Obviously by the time I return to the chicken waffle place the girl will look blankly at me and then reveal she gave mine away on account of their being no response to the shout-out.

Menu: Malaysian street food, chicken and waffles, dumplings, various booths which will no doubt change.

4/5 Atmosphere: Bustling warehouse with trestle tables and live music, had a definite vibe when the food rush calmed down.

3/5 Food: Nothing too challenging on offer, but facilities are limited chicken and waffles were good, nothing was bad.

Home is the latest venture by the team behind Social Bite – the successful chain of sandwich shops which allow customers to “pay a coffee forward” and invest profits to help vulnerable people get back on their feet.

It will provide training and employment programmes for members of the Social Bite Academy – the charity’s four-year course for homeless people – and the restaurant will open for a special service for the homeless every Monday afternoon.

Social Bite currently has two sandwich shops in Edinburgh – in Rose Street and Shandwick Place.

Clooney paid a visit to Social Bite’s branch in Rose Street last year and launched an appeal to help homeless people and fund an aid convoy carrying food and clothing to refugee camps across Europe.

Fans lined Rose Street to welcome Clooney, who took time to chat to the crowd and posed for selfies with Social Bite staff before speaking at the Scottish Business Awards.

Hotel Accommodation Review: Macdonald Holyrood Hotel, Edinburgh

Near the foot of the Royal Mile, overlooking the Scottish Parliament at Holyrood and a stones throw from Arthur’s Seat you’ll find the Macdonald Holyrood Hotel in Edinburgh.

A good test of a hotel is how well they fare at breakfast time.

We enjoyed our stay at Macdonald Holyrood, the staff were helpful, the buffet breakfast was very good, and we had a decent sleep though it was very hot during our stay and the air-con was a bit loud but check out time is 12 noon which is great if you need a few extra hours in bed.

Overall, Macdonald Holyrood is an ideal hotel for seeing the sights of Edinburgh, being right on the doorstep of the Royal Mile, Holyrood Palace, Scottish Parliament, Arthur’s Seat and a number of great restaurants like Wedgwood, 21212, The Gardener’s Cottage and pubs such as Holyrood 9a, Kilderkin and the Canon’s Gait.

+ Spacious bedroom with lots of pillows + Strong WiFi signal + Impressive shower + Leisure facilities are very good + Nespresso machine and pods in room + Big breakfast selection + Late check-out – Could do with more Scottish produce on show at breakfast i.e Stornoway black pudding or Ramsay’s bacon – Air-con was loud To find out more, or to book, visit their website here.
