Visit Chameleon for the cocktails, but not the food, says Gaby Soutar.

They’ll adapt to their New Town neighbourhood by encouraging diners to suggest menu tweaks, cocktail recipes or new dishes for their tapas-style menu.

While, the ceviche hake (£7) option featured a wet mixture of chopped white fish mixed with clean-tasting partners of crème fraîche, capers, cucumber ribbons, radish and chives, served on two small slices of sourdough.

The lamb (£10.50) featured chewy dark meat as atrophied as the sole of a vintage brogue, on top of a pile of red pepper and yogurt spotted couscous.

At least there was a bit of black pepper in the crumb, and moisture was provided by a splotch of herby mayo and like the other red meat option, it felt a bit like a gussied-up version of leftovers.

Describing itself as “Edinburgh’s first gourmet steak restaurant,” Kyloe only serves the best Scottish beef dry aged for a minimum of 28 days.

Tender cuts of rump, sirloin, ribeye and t-bone – seasoned with their signature steak rub – are served up from locally sourced farms, with most expertly prepared on the bone.

Probably not, and although there are a few non-meat options on the menu, cuts of beef are very much a way of life here, with a range of 21-35 day aged cuts of sirloin, fillet, ribeye or t-bone there to satisfy diners carnivorous cravings.

All 21 day aged steaks come from the Club’s registered butchers and the knowledgeable staff are trained to advise on which cut to go for based on the customer’s individual tastes.

If you are feeling adventurous and are sharing, then we recommend the Butcher’s Block for two – a variety of steak flavours and cuts including their 30 day aged Fillet 8oz, 50 day aged grain fed Ribeye 8oz, 30 day aged Rump 8oz and brisket stuffed marrow bone.

Energetic, a slightly mad front man, a disco ball and strictly no mango chutney.

You must also try dhal makhani, a three lentil dhal, turtle beans, urad dhal and red kidney beans dish (£6.75), served in an enamel mug.

Bhegan bartha, a smoked aubergine and pea curry, was another highlight (£6.50), as was the mixed pakora that greeted us on arrival (£8.50).

If you’ve got room for a pudding then the masala chai spiced doughnut is the best dessert on the menu (£5).

What we’re going back for: The disco ball, the dhal makhani which was so good, and to try the full Indian brunch (available at the weekend, 11-4pm).
