Established in 2015, Maki Ramen was established with hopes of serving high quality ramen.

Our signature dish, the 'Burn Soyu Ramen' was a result of a collaboration with Japan's Ramen Master Chef; Miss Misae Ueda, and continues to be a firm favourite in our small establishment.

We’ve both taken an extended Easter break from work, but we don’t fancy going ahead with our planned walk around Roslin Glen.

And so we find ourselves in Cineworld, in front of Peter Rabbit.

But, despite quite obviously trying to jump on the same bandwagon, it’s lacking the warm heart that so much nastiness here.

Not Bea (Rose Byrne), the drippy incarnation of Beatrix Potter, who thinks rabbits should have free access to crops.

And, sadly, not Peter either, nor any of his chums: they’re all cocky and banter-driven, cruel and bullying.

Amongst other things, it did a fantastic coconut rice, one of the best I’ve ever tasted.

I kept promising myself that we would drop by and check it out but, for one reason or another, the time was never right.

It’s already pretty busy when I arrive and the place is buzzing, but they soon find me a spot and I’m left to peruse the menu and admire the extensive collection of Post It notes left by the appreciative (and often rather talented) diners who have preceded me.

There’s a mound of sticky rice and (nice touch this) a chunk of al dente broccoli.

Oh yes, every meal comes with a little bowl of savoury miso soup, which is another nice touch.

Instead of hurried street vendors hawking their wares, the realities of climate and eating habits means these foods are brought inside, whether to supplement an existing restaurant menu, liven up a takeaway menu or to spark up a bar snacks offer.

In urban Scotland, Bar Soba is one example of a venue that has latched onto the appealing combination of beer and pan-Asian street food, developing the concept over a decade ago in the centre of Glasgow, and more recently in outlets in Glasgow’s West End and Edinburgh’s New Town, mixing the energy of humid South-East Asian streetlife with the popularity of casual, small-plate eating and the rise of the indie bar.

Koreans and Malaysians have achieved a dynamic local foothold in restaurants such as Edinburgh’s Kampung Ali Malaysian Delight – now making a bigger deal of its street food offer, and Ong Gie in Tollcross with its table-top grills.

Informal eating opportunities, lively flavours, open-minded diners: the stage is set for pan-Asian street food to grow and grow.

This large, contemporary omakase sushi bar offers classic dishes and outstanding specials.

With a blackboard full of tempting daily specials like refreshing slithers of fiery stonebass carpaccio, or beef tataki with black truffle butter blowtorched at the table, Maki & Ramen's menu is extensive.

The pig bone broth is rich and comforting whilst all the sushi classics come laden with vibrant fresh fish.

If deciding is tough then go omakase – translated as 'I'll leave it to you', this is a 12-course, chef-selected, tasting menu, complete with sake.

Unlike their original venue, this second Maki & Ramen is a large contemporary space with Japanese style seating (shoes off, legs crossed) and a sushi bar if you want to pick up some maki-making tips.
