Welcome to Edinburgh’s first gourmet steak restaurant.

The name Kyloe, an old Scots word for Highland beef cattle, was chosen for the restaurant as it represents the strength and versatility of Scottish beef produce.

We use cuts from pedigree Aberdeen Angus – supplied by some of Scotland’s top farms and butchers – to bring our customers the best possible steak experience.

Our first floor restaurant can be found in The Rutland Hotel at Edinburgh’s West End and boasts enviable views of Edinburgh Castle.

To help us make our decision, a warm loaf of bread served with butter and pesto only whetted our appetite for our first dabble with the new summer Kyloe menu.

Starters aside, we were now ready for the main event, and clearly the reason why Kyloe was almost at full capacity on a rainy Monday night – steak.

In a manner of speaking, sampling an array of steaks rather than a whole one each, secured Kyloe its gold star on our visit.

We opted to share the Kyloe steak board (£19.50), home to three unique cuts, with equally diverse flavours: bavette, onglet and marinated feather steak.

I pandered to the perfect wobble of a vanilla panna cotta with roasted peaches, biscotti and an amaretto and peach smoothie (£6.95).

Taking its name from the Scottish Gaelic for Highland beef cattle, Kyloe offers cuts from pedigree Aberdeen Angus breeds, sourced from Hardiesmill, (based in Gordon in the Borders), whose animal husbandry is exemplary.

He ensures his front of house staff fully brief diners with their “Steak Presentation,” which not only identifies the various cuts but gives a realistic indication of the portion size and the ideal method of cooking.

The wine list, by the glass and bottle, features an interesting selection, including Kyloe’s signature wine, “Angus the Bull” an Australian Cabernet Sauvignon, ideal with steak.

Service under restaurant manager John was welcoming and accommodating, especially regarding which table was best – I’m fussy about this and often wonder why some restaurants – not Kyloe fortunately – dim the lights so much.

A meal at Kyloe is a real pleasure, impressive on all fronts – the provenance of the meat, the precision of the cooking, the informative, unobtrusive service and the seductive ambience.

Certified Scotch beef comes in varied tenderness and marbling, with a Hardiesmill steak of the week and rotating guest breed to keep affairs interesting – that’s if the Highland Wagyu rump doesn't grab you first.

Our unique and interesting wine list has been sourced through numerous wine merchants and features Kyloe’s signature wine ‘Angus the Bull’, a South Australian Cabernet Sauvignon which is the ideal complement for your steak.

Surreal stunts aside, this gourmet steak restaurant has a lot to shout about.

We were shown to a cowhide booth in the centre of the bustling first-floor venue, which was among the many Capital establishments to be involved in this month’s Edinburgh Restaurant Festival.

With Andy Warhol-style pictures of cows hanging from the walls and rustic beer-barrel structures housing the lights, the restaurant is elegant but quirky.

It would have been rude to choose anything other than steaks for our main course, given the theme of the restaurant, not that we were tempted by anything else.

My companion was more adventurous and went for one of the night’s guest breeds – the American cut, which he reported was a welcome change; a succulent cut with a slightly different flavour and texture to what he was expecting.

Using the Dragon’s Den cliche, apparently this place spotted a “gap in the market” for a gourmet steak restaurant in Edinburgh.

It consisted of four delicate assemblages: melty carpaccio with a dollop of horseradish cream (a little more bite in the latter would have been nice but, still, it was inhaled happily); a chunky, mildly Tabasco-spiked steak tartare topped with a raw quail’s egg, its yolk shimmering like a halo; a sliver of tangy sweet-cured beef; and another of peppery pastrami atop Tango-orange carrot purée and a cheeky little gherkin.

As was my main, the Kyloe Steak Board (£18), which boasted three lesser regarded cuts – an onglet, bavette, and a marinated feather blade, all served medium rare (we weren’t given a choice, but this was fine with me).

The violet-centred onglet was soft and plump, the bavette coarser, while the feather blade was all irony richness, with garlic and black pepper seasoning.
